
Now, you should keep in mind that there are different versions of the same dessert. People add things they like and subtract things they don't. The main ingredients of mung bean dessert are of course, mung bean (or green been), coconut milk and (frozen) panda leaves. It's quite easy to find mung bean and coconut milk in many grocery stores. The hard part is panda leaves which are often found in freezer isle of Asian (Chinese/Vietnamese) markets. If you can't find the leaves, you can substitute with either panda leave extract or vanilla extract. The dessert still tastes really really good.

Trong post hôm nay, mình sẽ chia sẻ với mọi người một trong những món tráng miệng phổ biến nhất VN - Chè đậu xanh lá dứa. Cực kỳ ngon và dễ làm. Đảm bảo rằng nếu bạn thử ăn một lần, bạn sẽ muốn ăn thêm, ăn thêm nữa bởi vị ngọt của đậu xanh, béo của nước cốt dừa, thơm lừng của lá dứa.
Mỗi món ăn đều có nhiều công thức khác nhau, dù rằng thành phẩm sẽ cùng mang chung một cái tên. Bạn có thể thêm nguyên liệu bạn thích, bỏ đi nguyên liệu bạn không thích. Thành phần chính của món chè này là đậu xanh, lá dứa, nước cốt dừa. Nếu bạn ở VN thì các nguyên liệu này quá dễ tìm ở các chợ. Nhưng nếu bạn đang ở nước ngoài, bạn có thể tìm đậu xanh (cà vỏ) và nước cốt dừa lon ở rất nhiều chợ bản xứ. Còn lá dứa có thể tìm thấy trong khu đông lạnh của chợ châu Á. Nếu không, hoàn toàn có thể thay thế bằng tinh dầu lá dứa hoặc vani, chè cũng sẽ vẫn rất ngon.GREEN BEAN DESSERT RECIPE
Mung bean (or green bean) 1 cups (approx. 200 gr)
Coconut milk 7 oz or half of a can
Sugar 1 cup and 2 tsps
Panda leaves 7
Corn starch 2 tsps
Salt and water
- Soak mung bean in about 3 cups of water and let it sit separately.
- In medium heat, bring cups of water and panda leaves to boil. Reduce the heat a bit, then let the leaves release all the aroma in boiling water for about 15 minutes till the water turn into greenish.

- Meanwhile, in a separate pot, stir 7 oz coconut milk, 2 tsps corn starch, 2 tsps sugar, and 1/3 tsp salt completely and bring to boil in low heat until little bubble appears. Turn off the heat and set a side.
- Put the bowl of mung bean into the pot of panda leaves, take out yellow foam on the surface, simmer for 15 minutes
- Take out the panda leaves, add a cup of water, a cup of sugar and 1/3 tsp salt into the pot. Keep simmering in 10 minutes and you are done.

- Serve green bean with coconut sauce. Add shaved ice if desire.

CHÈ ĐẬU XANH LÁ DỨA
Đậu xanh cà vỏ 1 cups (khoảng 206 gr)
Nước cốt dừa lon 200 ml (nửa lon)
Đường 1 cup và 2 muỗng café (1 cup đường = 227gr)
Lá dứa lớn 7 lá
Bột bắp 2 muỗng cafe
Muối và nước
- Ngâm đậu xanh trong 3 cups nước, để riêng. (1 cup nước = 235 ml)
- Mở lửa trung bình, bỏ lá dứa vào đun cùng 3 cups nước tới khi sôi. Vặn lửa nhỏ hơn, để liu riu trên bếp khoảng 15 phút cho lá dứa nhả hết mùi thơm, nước chuyển sang màu xanh nhạt.
- Trong khi đó, lấy riêng một nồi, quậy cho tan hết 200 ml nước cốt dừa, 2 muỗng đường, 2 muỗng bột bắp, 1/4 muỗng café muối. Đun nhỏ lửa, tới khi nước cốt dừa sôi lăn tăn thì tắt bếp.
- Cho đậu xanh ngâm nở vào nồi nước lá dứa, đun vừa lửa trong 15 phút, bỏ hết bọt vàng trên bề mặt.
- Vớt lá dứa, thêm 1 cup nước lạnh, 1 cup đường và 1/3 muỗng café muối vào nồi. Tiếp tục đun thêm 10 phút, tắt bếp.
- Trang trí chè vào ly với nước cốt dừa. Thêm đá bào nếu muốn.
